GF Chocolate Cupcakes & Strawberry Icing

1 Box Betty Crocker Gluten Free Chocolate Cake Mix

sour cream

strawberries

lime juice

powdered sugar

half in half

1/2 stick Philidelphia Cream Cheese

 

Directions:

Mix Betty Crocker GF Chocolate Cake as directed, adding a couple big spoonfulls of sour cream. ( I always add sour cream to cakes, it helps add moisture) Bake as directed on box.

Icing:

use 1/2 a stick of Philidelphia Cream Cheese, use a mixer to blend. Add two splashes of half and half into cream cheese as it’s blending. In a food processor chop 5-7 strawberries until well blended. Add into icing.  Cut lime into halves. Squeeze lime once lightly, into icing. Add powdered sugar until icing is thick, and stiff peaks stand on their own.

When cupcakes cool, ice. Cut strawberry leafy tops and adorn on top of the cupcakes for decoration.
